January to March
After the Autumn harvest of grapes that go to make some of the world's best Chardonnays, Pinot Noirs, Rieslings and Gewürztraminers, many vineyards remain laden with grapes left to shrivel in the winter cold.
Then, suddenly, in the middle of the night in the middle of winter, the grapes are picked, and crushed with the frozen water crystals skimmed away. What remains are the beginnings of the Refreshment of the Gods.
Ice Wine.
